Recipe-Super easy Granola Bars

I’m not one to create my own recipes as I don’t always measure out ingredients perfectly to keep track of them. I also sometimes use recipes as a guide and tweak them with my own add-ins, substitutions or taking food out to create my own version or twist. However I am always happy to share favorite recipes that I enjoy making. Here is one for super easy homemade granola bars that require no baking. Enjoy!!

Easy No Bake Granola Bars

Ingredients:

2 cups rolled oats

½ cup raisins

2 tablespoons creamy peanut butter

1 teaspoon vanilla extract

1.5 cups mashed ripe banana (about 3 medium/large bananas)

1/8 teaspoon salt (optional)

Instructions: 1. Toast the oats in a 350- degree oven for 15 minutes or until slightly golden brown.  2. Warm peanut butter in a small saucepan over low heat.  3. Mix peanut butter, raisins, vanilla, banana, and salt in a medium bowl.  4. Add oats to peanut butter mixture. Mix well.  5. Once thoroughly mixed, transfer to an 8×8 dish or other small pan lined with plastic wrap or parchment paper so they lift out easily. 6. Press down until flattened. Cover with parchment or plastic wrap, and let set in fridge or freezer for 15-20 minutes to harden. 7. Remove bars from pan and chop into 10 even bars.

I can go months without journaling only to pick it back up when reading a certain spiritual book, working on trauma healing, I need to work something out, or it’s a new moon ritual.
